Christmas Style Stuffed Chicken Breasts

After our New Year’s Day roast dinner on Wednesday, we still had loads of stuffing balls leftover and didn’t know what to do with them. So in a last desperate attempt to hold onto Christmas (I’ve loved it too much this year for it to be over already!), I decided to create this recipe for Christmas Style Stuffed Chicken Breasts. We served it with our Oven-Baked Bubble and Squeak (recipe coming soo!n), and it was the perfect festive flavoured dish which you can also have all year round. IMG_8343 Ingredients:

  • 4 chicken breasts
  • 4 prepared, uncooked stuffing balls – use any flavour, we used Pork and Apple
  • 4 tsp cranberry sauce
  • 8-12 slices unsmoked bacon

Method: 1. Preheat the oven to 200°C or gas mark 6 2. Make a pocket in each chicken breast by cutting a slit along the side


3. Spread 1 tsp of cranberry sauce in each pocket

4. Flatten the stuffing balls and put 1 in each pocket, then close them up



5. Tightly wrap 2-3 slices of bacon around each chicken breast


6. Bake the in the oven for 30-35 minutes until cooked through
