Cheat’s Sausage Casserole For One

Yes it’s great to make things from scratch, but sometimes I don’t always have the time to stand cooking for ages in the kitchen. That’s when little shortcuts, like using a Colman’s packet mix in this recipe, can be really convenient. The result – a super yummy, easy and cheap sausage casserole.

  • 2 sausages
  • 1 small tin of baked beans
  • 1/2 packet of Colman’s Sausage Casserole Mix
  • 200ml cold water

  1. Preheat the oven to 200°C or gas mark 6
  2. Place the sausages in a small ovenproof dish
  3. Mix together the Colman’s mix, water and baked beans, then pour over the sausages
  4. Cover with a lid or tin foil and bake in the oven for 1 hour
  5. Serve with mash

IMG_9154Tips and Ideas:

  • Experiment with different flavours of sausages – pork and apple or Cumberland sausages would be really tasty in this
  • Use quorn sausages for a veggie-friendly dish – I often use quorn sausages too and they work perfectly in this dish
  • Bulk out the meal with extra vegetables if desired
  • Not a fan of baked beans? Swap them for a different type of bean, or bulk it out with vegetables instead
