Creamy Butternut Squash Gnocchi For One

After trying lots of new food over the weekend during my Unexpected Foodie Weekend in Birmingham, I thought I’d continue my foodie adventure and experiment with dinner on Sunday night. I decided make a new recipe idea that I’ve had for a while – a creamy butternut squash sauce to serve with gnocchi.

I love it when recipe experimenting works out well, and this was definitely one of those times! A perk of cooking for one person is that I always have leftover ingredients too and so I can make a dish I’ve loved again for dinner that week…which I think I’ll be doing tonight with this creamy, sweet and tasty new gnocchi dish!



  • About 250-300g butternut squash, peeled and cubed – get pre-prepared butternut squash if you can as it can be quite tough to cut
  • 100ml milk
  • 2-3 tbsp cream cheese
  • 1 small onion, sliced
  • 1 garlic clove, finely chopped
  • 3 fresh sage leaves
  • 1 tsp grated parmesan
  • 200-250g fresh gnocchi


1. Preheat the oven to 200C or gas mark 6
2. Put the cubed butternut squash onto a baking tray and spray with FryLight and a pinch of pepper, then roast for 25-30 minutes until soft

3. Add the roasted squash, milk, cream cheese, sage leaves and a pinch of pepper to a saucepan and blitz using a hand blender until smooth

4. Fry the sliced onions and garlic for 5 minutes until softened, then add this to the butternut squash cream and blitz until smooth again
5. Stir in the parmesan, then heat the sauce for several minutes until piping hot – if it is too thick, add more milk
6. To a pan of boiling water, add the gnocchi and cook for 2 minutes until it rises to the surface of the water and is soft. Then stir the cooked gnocchi into the sauce and serve


Tips and Ideas:

  • Serve it with vegetables if desired – green beans, asparagus or mangetout would work nicely
  • Make your own gnocchi from scratch if you have time
