Thai Green Chicken Curry For One

My Thai Green Prawn Curry For One recipe was one of the first recipes that I ever posted on my blog! It’s a very non-traditional, basic interpretation of a Thai green curry, but it’s quick and easy and still tastes great. However when my Mum visited at the weekend, I decided to try creating a more authentic Thai green curry for us and it was delicious! It was packed with flavour, thanks largely to the use of The Garlic Farm Thai Green Curry Paste with Garlic – one of their newest products that I couldn’t resist adding to my collection at the BBC Good Food Show Summer.



  • 1/2 onion, finely chopped
  • 1/2 – 1 tbsp of good quality Thai green curry paste – I used The Garlic Farm Thai Green Curry Paste with Garlic
  • 1 chicken breast, cut into chunks
  • 2 kaffir lime leaves, roughly shredded
  • 100-150ml low fat coconut milk
  • Splash of fish sauce
  • Small handful of fresh coriander, roughly chopped
  • Juice of 1/2 lime


  1. Fry the onion for 4-5 minutes in a little oil or FryLight spray until caramelised, then stir in the Thai green curry paste and cook for a further minute
  2. Add the kaffir lime leaves and chicken, then stir in the coconut milk and fish sauce and mix well
  3. Bring it to the boil, then simmer on a medium heat for 15-20 minutes until the chicken is cooked through and the sauce has thickened slightly
  4. Stir in the coriander and lime juice, then serve with rice


Tips and Ideas:

  • Swap the chicken for King prawns or salmon
  • Add some vegetables – like aubergine, baby sweetcorn, butternut squash, green beans or sugar snap peas
  • Make it veggie friendly by swapping the chicken for quorn and adding lots of vegetables
