Ham and Pea Soup

This is a great recipe to use up leftover gammon, and you only need to add a few staple ingredients that can be found in every cupboard, fridge and freezer to make the soup! It’s also super quick to make and results in a really flavoursome soup.

Serves 3-4

Ingredients:

  • 1 small onion, finely chopped
  • 1 tsp butter
  • 1 small potato, peeled and diced into small cubes
  • 750ml ham or chicken stock
  • 150g cooked gammon or ham, roughly chopped/shredded
  • 250g frozen peas

Method:

  1. Fry the onions in the butter for 3-4 minutes until caramelised, then add the potatoes and stir to coat in the buttery onion mixture
  2. Add the stock and some seasoning, and let it bubble away for 5 minutes until the potato has softened
  3. Add the frozen peas and gammon, and cook for another 5 minutes
  4. Blitz the soup until smooth using a hand blender – if the soup is too thick, add more water. Taste to see if it needs more seasoning, then serve
