Chocolate Malteser Cake

At the weekend, me and Katie got our baking hats on and made this Chocolate Malteser Cake for Emily’s birthday! I couldn’t try any myself, but the girls all loved it. So if you’re a chocolate lover then you need to make this cake now…


I think a Malteser Cheesecake is definitely next on the agenda to make now too…watch this space!


For the Cake:

  • 180g unsalted butter, softened
  • 180g caster sugar
  • 3 medium eggs
  • 180g self raising flour
  • 25g cocoa powder
  • 4 tbsp milk
  • 150g Maltesers

For the Chocolate Buttercream Icing:

  • 250g icing sugar
  • 25g cocoa powder
  • 125g unsalted butter, softened


  1. Preheat the oven to 180C or gas mark 4. Grease two 20cm round sandwich tins and set aside
  2. Beat the sugar and butter together in a bowl using an electric whisk until light and fluffy. Then add the eggs, flour, cocoa powder and milk and beat it again until smooth
  3. Split the mixture equally between the two tins and bake in the oven for 30 minutes until firm and a knife/skewer inserted into the middle comes out clean
  4. Leave them to stand for a couple of minutes, then turn them out of their tins and allow to cool completely
  5. To make the buttercream icing, mix together the icing sugar and cocoa powder using a spoon. Mix in the butter using an electric whisk, then pour in 2 tbsp of boiling water and mix again until it’s has a glossy appearance and is nice and gooey
  6. Split the buttercream icing between two bowls. Then roughly chop 30g of the Maltesers into small pieces and mix them into one bowl of icing until evenly distributed
  7. Place one of the sponges on a plate and spread the Malteser buttercream onto it, then place the second sponge on top and cover with the rest of the buttercream
  8. Decorate by placing the remaining of the Maltesers in a circle pattern until the top is completely covered, and leave to chill in the fridge until serving
