Chicken Stir Fry For One

A healthy and (most importantly!!) tasty stir fry that can be whipped up in next to no time, making it the perfect midweek meal.



  • 1 chicken breast, chopped into bitesize chunks
  • 1 red onion, sliced
  • 1 garlic clove, finely chopped
  • 1/4 red chilli, deseeded and finely chopped
  • 1/2 lime
  • 1 tbsp tomato puree
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tsp sugar
  • 1/2 tsp Chinese 5 spice
  • Small handful of fresh coriander, roughly chopped
  • 1/2 bag of stir fry mix
  • 1 portion of fresh egg noodles


  1. Mix the red chilli, garlic, tomato puree, dark soy sauce, light soy sauce, sugar, Chinese 5 spice, and a squeeze of lime juice in a bowl. Add the chicken and stir until evenly coated, then leave to marinade in the fridge for at least 30 minutes if you have time
  2. Fry the onion and the stir fry mix in a little oil for a few minutes
  3. In a separate pan, fry the chicken and cook for 5 or so minutes until cooked through, then add to the stir fry mix
  4. Add the noodles and cook for 2-3 minutes, adding a splash of soy sauce if needed
